Why I love bread making.

From cookbook author Betsy Oppenneer:  Bread is extremely personal.  Three people can follow the same recipe and the end results would produce three entirely different masterpieces.  The way each person measures, or doesn’t measure, the method of mixing ingredients, the length of time bread is kneaded, the types of pans, the weather and the oven are among the many variables.  Each bread is entirely you and no one else can completely duplicate it.

Natural yeast starters, sometimes called sourdough starters, are more vigorous and pungent near an ocean!

Sourdough bread bakers call their sourdough starters “mothers”.IMG_6069
