Lovin’ the Food…

Humintas.  Uniquely Bolivian, as far as I know.  Made of fresh field corn kernels, ground between two stones, and seasoned with farmer’s cheese, sugar, salt and anise seed.  Steamed in their wrappings and tie-ings of cut and torn corn husk, laying on top of corn cobs, in two or three inches of boiling water, in a huge covered pot.  The people of Bolivia say that the very best ones of all are cooked on an open wood fire.IMG_1917
